1 lb (450g) mini chicken or turkey sausages, sliced

1 medium bell pepper (red, yellow, or green), diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 tablespoon olive oil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz (225g) shredded mozzarella cheese

1 small packet of biscuit dough or puff pastry (optional, for serving)

Instructions
 

Sauté the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sliced mini sausages and cook until browned on all sides, approximately 5-7 minutes.

    Add Vegetables: Once the sausages are nicely browned, add the diced onion and bell pepper. Sauté for an additional 4-5 minutes until the vegetables are soft.

      Garlic and Seasoning: Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes. Cook for another 1-2 minutes, stirring constantly to prevent the garlic from burning.

        Combine and Melt: Reduce the heat to low, and sprinkle the shredded mozzarella cheese over the sausage and veggie mix. Cover the skillet with a lid and let it cook for about 2-3 minutes, or until the cheese is melted and bubbly.

          Taste and Adjust: Remove the lid and taste the mixture, adjusting seasoning with salt and pepper if needed.
