Ingredients

1 cup cooked quinoa

1 ripe avocado, mashed

1 tablespoon lime juice

Salt and pepper, to taste

1 teaspoon garlic powder

6 ounces smoked salmon, sliced into small circles

1 small cucumber, thinly sliced

1/4 cup red onion, finely chopped

Fresh dill, for garnish

4 slices of whole-grain bread

Olive oil, for drizzling

Instructions

Prepare the Bread: Preheat your oven to 375°F (190°C). Using a circular cookie cutter, cut shapes from each slice of whole-grain bread to create mini circles. Place the bread circles on a baking sheet.

Toast the Base: Drizzle the mini bread circles with a little olive oil. Toast them in the oven for about 8-10 minutes or until they are golden and crispy. Remove from the oven and let them cool.

Make the Avocado Spread: In a bowl, mix the mashed avocado with lime juice, garlic powder, salt, and pepper to taste. Stir well until you have a smooth, creamy texture.

Assemble the Toasts: Spread a generous layer of the avocado mixture on each toasted bread circle. Ensure they are well covered for maximum flavor.

Layer with Salmon: Place a slice of smoked salmon on top of the avocado spread on each toast.

Garnish: Add a couple of thin cucumber slices and a sprinkle of red onion on top of the salmon. Finish with a few sprigs of fresh dill for added freshness.

Serve and Enjoy: Arrange the mini salmon avocado toast circles on a serving platter and enjoy immediately as a delightful appetizer or a light snack!
