4 small sweet bell peppers (red, yellow, or orange)

4 large eggs

1/2 cup cooked and crumbled breakfast sausage (or vegetarian alternative)

1/4 cup shredded cheddar cheese

1/4 cup milk

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for drizzling

Optional toppings: sliced avocado, hot sauce, or sour cream

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the sweet bell peppers and remove the seeds and membranes. Lightly drizzle the outside of the peppers with olive oil and place them cut side up in a baking dish.

      Make the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined. Stir in the cooked sausage, shredded cheese, and chopped parsley.

        Fill the Peppers: Pour the egg mixture into each of the prepared peppers, filling them to the top.

          Bake the Peppers: Cover the baking dish with foil and place it in the preheated oven. Bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the eggs are set and the tops are slightly golden.
