Mini Grilled Cheese Nacho Sliders

8 slices of bread (white, whole wheat, or sourdough)

4 tablespoons of butter (softened)

8 ounces of sharp cheddar cheese (sliced)

4 ounces of pepper jack cheese (sliced)

1 cup tortilla chips (crushed)

1 tablespoon taco seasoning

1/2 cup diced tomatoes (fresh or canned)

1/2 cup shredded lettuce

1/4 cup jalapeños (sliced, optional)

1/4 cup sour cream (for serving)

Salsa (for serving)

Instructions
 

Prep the Bread: Start by preheating your grill pan or skillet over medium heat. Spread softened butter on one side of each slice of bread. This will give them a beautiful golden crust.

    Assemble Sandwiches: Place a slice of bread (buttered side down) on a clean surface. Layer two slices of sharp cheddar cheese and one slice of pepper jack cheese on top. Sprinkle a tablespoon of crushed tortilla chips over the cheese, followed by a sprinkle of taco seasoning. Add diced tomatoes and jalapeños if you’re using them. Top with another two slices of cheese before closing the sandwich with a second slice of bread (butter side up).

      Grill the Sliders: Carefully place the assembled sandwiches in the preheated grill pan or skillet. Cook for about 3-4 minutes until the bottom is golden brown and the cheese is starting to melt. Using a spatula, carefully flip the sandwiches and cook for another 3-4 minutes on the other side.
