For the Chicken Salad:

2 cups cooked chicken breast, shredded or diced

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup kalamata olives, pitted and chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

For the Flatbreads:

4 small whole wheat or pita flatbreads

Extra olive oil for brushing

Optional: Additional feta and parsley for garnishing

Prepare the Chicken Salad: In a large mixing bowl, combine the shredded chicken, diced cucumber, halved cherry tomatoes, chopped red onion, kalamata olives, crumbled feta cheese, and chopped parsley.

    Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour this dressing over the chicken salad mixture and toss gently until everything is well coated.

      Warm the Flatbreads: Preheat a skillet over medium heat. Lightly brush one side of each flatbread with olive oil. Place the flatbreads oil-side down onto the skillet and warm for about 1-2 minutes, until they are slightly crispy. Flip and warm the other side for another minute.
