Mini Chicken Taco Ring Bites

Ingredients
  

1 lb ground chicken

1 tablespoon taco seasoning

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

1 package refrigerated crescent roll dough (8 oz)

1/2 cup sour cream

1/2 cup guacamole

Olive oil, for brushing

Fresh cilantro, for garnish

Optional: jalapeños, sliced, for added heat

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Chicken: In a skillet over medium heat, add ground chicken and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary. Stir in the taco seasoning and cook for an additional 2-3 minutes until well mixed and heated through.

      Prepare Crescent Dough: Unroll the crescent roll dough and separate it into triangles.

        Form the Ring: On a baking sheet lined with parchment paper, create a circle with the triangles by placing the wider ends of the triangles on the outer edge of the circle and overlapping each triangle slightly. Make sure there is an open space in the center for filling.

          Fill with Chicken: Spoon the cooked chicken mixture into the center of the dough ring. Top it with shredded cheddar cheese.

            Wrap the Dough: Fold the points of the triangles over the filling, tucking them under the dough on the baking sheet. Brush the tops with a little olive oil for a golden finish.

              Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the dough is golden brown and cooked through.

                Garnish & Serve: Remove from oven and let cool for a few minutes. Top with shredded lettuce, diced tomatoes, and fresh cilantro. Serve with sour cream and guacamole on the side. If desired, add jalapeño slices for an extra kick.
