1 loaf of French baguette, sliced into 1-inch pieces

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1/2 cup diced red onion

1/4 cup chopped fresh cilantro

1 avocado, diced

1 jalapeño, sliced (optional, for heat)

1 teaspoon cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper, to taste

Sour cream and salsa, for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Baguette: Arrange the sliced baguette pieces on a baking sheet. Brush them lightly with olive oil and sprinkle with a bit of salt. Bake in the preheated oven for about 5-7 minutes, or until they are slightly toasted. Remove from the oven and set aside.

      Make the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, cumin, chili powder, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.

        Assemble the Stacks: On each toasted baguette slice, spoon a generous amount of the chicken mixture. Top each stack with a sprinkle of shredded cheddar cheese.
