Mini Chicken Fajita Taco Cones

1 pound chicken breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 bell pepper (red, green, or yellow), thinly sliced

1 small onion, thinly sliced

1 cup shredded cheddar cheese

1 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped

12 mini cone-shaped taco holders or homemade taco cones

1 lime, cut into wedges

Instructions
 

Prepare the Chicken Filling: In a medium bowl, combine the diced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Mix well to coat the chicken evenly with the spices.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté them for about 3-4 minutes until they are tender but still crisp. Add the cooked chicken back into the skillet and stir everything together for another minute. Remove from heat.

        Assemble Taco Cones: If using pre-made taco cones, place them in a taco holder. If making from scratch, you can shape small tortillas into cones by folding them into a cone shape and securing with toothpicks. Fill each cone with the chicken and vegetable mixture.

          Add Toppings: Sprinkle shredded cheddar cheese on top of each filled cone. Optionally, you can place them under the broiler for 1-2 minutes until the cheese is melted and bubbly.
