1 lb shredded cooked chicken (rotisserie chicken works great)

1 cup enchilada sauce (red or green, based on your preference)

1 cup shredded cheese (Mexican blend or cheddar)

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned, frozen, or fresh)

1/4 cup chopped fresh cilantro

12 slider buns (mini brioche or Hawaiian rolls)

1/4 cup sour cream (for topping)

1 ripe avocado, sliced (for topping)

1 jalapeño, sliced (optional, for spice)

Olive oil or cooking spray

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a baking dish by lightly greasing with olive oil or cooking spray.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, 3/4 cup of enchilada sauce, 1/2 cup of shredded cheese, black beans, corn, and chopped cilantro. Mix until all ingredients are well combined.

      Assemble the Sliders: Slice the slider buns in half horizontally. Place the bottom halves in the greased baking dish. Spoon the chicken mixture evenly over the bottom halves of the slider buns. Drizzle the remaining enchilada sauce on top of the chicken mixture, then sprinkle with the remaining 1/2 cup of shredded cheese.

        Add the Top Buns: Place the top halves of the slider buns over the filling. If desired, brush a little olive oil on the tops of the buns for a golden finish.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the tops of the buns are golden.

            Serve: Remove from the oven and allow to cool for a few minutes. Use a sharp knife to separate the sliders. Serve topped with sour cream, avocado slices, and jalapeño if desired.
