Mini Chicken Caesar Biscuit Sliders

1 lb boneless, skinless chicken breasts

1 cup Caesar dressing

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon black pepper

1 tablespoon olive oil

16 refrigerated biscuit dough rounds (such as Pillsbury)

2 cups romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

Extra Caesar dressing for drizzling

Freshly cracked black pepper and extra Parmesan for garnish

Instructions
 

Cook the Chicken: Preheat your oven to 375°F (190°C). In a skillet over medium heat, add olive oil. Season the chicken breasts with garlic powder, black pepper, and a bit of salt. Cook for about 6-7 minutes on each side, or until the chicken is fully cooked and golden brown. Once cooked, remove from heat and let cool slightly before shredding.

    Prepare the Chicken Caesar Mixture: In a large mixing bowl, combine the shredded chicken, 1 cup of Caesar dressing, and grated Parmesan cheese. Mix well until the chicken is evenly coated.

      Prepare the Biscuits: While the chicken mixture is cooling, open the tube of biscuit dough and separate the rounds. Place them on a baking sheet lined with parchment paper, and slightly flatten each round with your palm.

        Assemble the Sliders: Take one biscuit round and place a generous tablespoon of the chicken Caesar mixture in the center. Top with a small handful of chopped romaine lettuce and a few cherry tomato halves. Cover with another biscuit round to create a sandwich. Repeat until all chicken mixture is used.

          Bake the Sliders: Put the assembled sliders in the preheated oven and bake for 15-20 minutes, or until the biscuits are golden brown.

            Garnish and Serve: Once out of the oven, allow to cool for a couple of minutes. Drizzle with extra Caesar dressing, and sprinkle with freshly cracked black pepper and additional Parmesan cheese. Serve warm.
