Mini Cherry Pie Bites

1 package of pre-made pie crusts (2 crusts)

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

1 egg, beaten (for egg wash)

Coarse sugar for sprinkling

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Stir well and cook until the mixture starts to bubble and thicken, about 5-7 minutes. Once thickened, remove from heat and let it cool completely.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Roll Out the Dough: On a lightly floured surface, roll out the pre-made pie crusts to about 1/8-inch thick. Using a round cookie cutter (about 3 inches in diameter), cut out circles from the dough. You should get about 12-16 circles depending on the size of your cutter.

        Assemble the Bites: Place half of the dough circles on a parchment-lined baking sheet. Spoon about 1 tablespoon of the cherry filling into the center of each circle. Be careful not to overfill.

          Seal the Bites: Lightly brush the edges of each filled circle with the beaten egg. Place another dough circle on top of each filled circle and press the edges together with a fork to seal them. Make sure to poke a few small slits on the top for steam to escape.

            Egg Wash and Sugar Sprinkle: Brush the tops of the mini pies with the remaining beaten egg, and sprinkle a little coarse sugar on top for added sweetness and crunch.

              Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and flaky.

                Cool and Serve: Allow the mini cherry pie bites to cool on a wire rack for 10 minutes before serving. Enjoy them warm or at room temperature!
