2 cups grated potatoes (about 2 medium-sized potatoes)

1 cup finely chopped broccoli florets

1 cup shredded sharp Cheddar cheese

1/2 cup finely chopped onion

2 large eggs

1/2 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper, to taste

2 tablespoons olive oil (for frying)

Sour cream or Greek yogurt (for serving, optional)

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C) if you plan to melt the cheese atop the stacks later.

    Prepare the potatoes: Rinse the grated potatoes under cold water to remove excess starch. Drain well and pat them dry with a clean kitchen towel to remove moisture.

      Mix the batter: In a large mixing bowl, combine the grated potatoes, chopped broccoli, shredded Cheddar cheese, chopped onion, eggs, flour, garlic powder, paprika, salt, and black pepper. Mix until everything is well combined and holds together.

        Form the stacks: Using about 1/4 cup of the mixture for each stack, shape them into small patties or stacks about 1 inch thick.

          Fry the stacks: Heat the olive oil in a large skillet over medium heat.
