1/2 cup sugar

1 teaspoon vanilla extract

1 small apple, peeled, cored, and finely diced (about 1 cup, such as Granny Smith or Honeycrisp)

For the caramel topping:

1/2 cup caramel sauce

Extra diced apple (for garnish)

Optional: whipped cream for serving

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners or spray with non-stick cooking spray.

Make the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, sugar, and cinnamon until well combined.

      - Scoop about 1 tablespoon of the mixture into each muffin tin cup and press it down firmly to form the crust.

        - Bake the crusts for 5-7 minutes or until they are slightly golden. Remove from the oven and set aside to cool.

Prepare the Cheesecake Filling: In another bowl, beat the softened cream cheese and sugar together until smooth.

            - Mix in the vanilla extract and egg until well combined.

              - Stir in the sour cream and cinnamon until everything is mixed evenly.

                - Gently fold in the diced apple to incorporate.

Fill the Cups: Spoon about 1 tablespoon of the cheesecake mixture over each crust in the muffin tin, filling them approximately 3/4 full.

Bake the Cheesecakes: Bake in the preheated oven for 15-18 minutes, or until the cheesecakes are set and just slightly jiggle in the center.

                      - Remove from the oven and let cool at room temperature for 10 minutes, then refrigerate for at least 2 hours to firm up.

Add Caramel Sauce: Once chilled, drizzle caramel sauce generously over each cheesecake bite.

                          - For added texture and flavor, sprinkle some extra diced apples on top.

Serve: Optionally, serve with a dollop of whipped cream and enjoy your delectable mini caramel apple cheesecake bites!
