1 block (14 oz) firm tofu, pressed and drained

1 head of butter lettuce (or romaine, if preferred)

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced cherry tomatoes

1/4 cup red onion, finely chopped

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into small cubes (about 1/2-inch).
