2 cans young green jackfruit in brine (not syrup), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup BBQ sauce (store-bought or homemade)

1 teaspoon smoked paprika

Salt and pepper to taste

For the Nacho Cups:

12 mini tortilla cups (store-bought or homemade)

1 cup shredded cheddar cheese (or dairy-free alternative)

1 cup diced tomatoes

1/2 cup diced red onion

1/2 cup sliced black olives

1/4 cup fresh cilantro, chopped

1 avocado, sliced or diced for topping (optional)

Sour cream or vegan sour cream for drizzling (optional)

Prepare the Jackfruit: Start by shredding the jackfruit. With your hands or using two forks, pull apart the jackfruit pieces until it resembles pulled meat. Discard the core and any hard seeds.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and sauté for another 1 minute until fragrant.
