Mini BBQ Chicken Cornbread Bowls

2 cups cornbread mix

1 cup milk

1 large egg

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup cheddar cheese, shredded

1/2 cup green onions, finely chopped

1/4 cup cilantro, chopped (optional)

Cooking spray or oil for greasing

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a muffin tin by spraying it with cooking spray or lightly greasing it with oil.

    Make the Cornbread Batter: In a large bowl, combine the cornbread mix, milk, and egg. Stir until just blended and no lumps remain.

      Prepare the Chicken: In a separate bowl, mix the shredded chicken with the BBQ sauce until the chicken is well coated. You can adjust the amount of sauce according to your taste preference.

        Fill the Muffin Tin: Pour about 2 tablespoons of the cornbread batter into each muffin cup, filling them about halfway. Then, add about a tablespoon of the BBQ chicken mixture on top of the batter in each cup. Finally, top the chicken with another tablespoon of cornbread batter, covering the chicken.

          Add Cheese: Sprinkle shredded cheddar cheese on top of each cornbread bowl to add a delicious cheesy crust.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the cornbread comes out clean.
