1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp nutmeg

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 cup diced apples (peeled and cored, about 1 medium apple)

1/4 cup chopped walnuts or pecans (optional)

1 tbsp brown sugar (for topping)

1 tsp cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg until well combined.

      Combine Wet Ingredients: In another bowl, mix the applesauce, milk, vegetable oil (or melted coconut oil), and egg until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix! Gently fold in the diced apples and chopped nuts (if using).
