4 cups fresh corn kernels (about 6 ears of corn) or 2 cans (15 oz each) of corn, drained

1 cup creamy mayonnaise

1 cup sour cream

1 cup crumbled feta cheese (or cotija for a more traditional flavor)

1 teaspoon chili powder

1 teaspoon smoked paprika

1 clove garlic, minced

1 jalapeño, finely chopped (remove seeds for less heat)

½ cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper, to taste

Tortilla chips, for serving

Instructions
 

Prepare the Corn: If using fresh corn, first boil the corn for about 5-7 minutes or until slightly tender. Once cooled, cut the kernels off the cobs and set aside. If using canned corn, simply drain and rinse the kernels.

    Mix the Base: In a large mixing bowl, combine the mayonnaise and sour cream. Stir until smooth and combined.

      Season It Up: Add the chili powder, smoked paprika, minced garlic, and lime juice to the creamy mixture. Stir to incorporate the spices evenly.

        Add the Corn: Fold in the corn kernels (fresh or canned) carefully to ensure they don’t break apart too much.

          Incorporate Cheese and Vegetables: Gently mix in the crumbled feta or cotija cheese, chopped jalapeño, and fresh cilantro. Stir just until evenly distributed throughout the dip.

            Taste and Adjust: Season your dip with salt and pepper to taste. Additionally, adjust the lime juice and chili powder if you prefer a more tangy or spicier dip.

              Chill: Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together beautifully.
