Ingredients

1 cup plain Greek yogurt (full-fat for best results)

1 large egg

1/2 cup granulated sugar

1/4 cup melted unsalted butter

1 tsp vanilla extract

1 tsp baking soda

1 1/2 cups all-purpose flour

1/2 tsp salt

1/4 tsp ground cinnamon (optional)

1/2 cup powdered sugar (for glazing)

2 tbsp milk (for glazing)

1/2 tsp vanilla extract (for glazing)

Sprinkles (optional, for decoration)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a donut pan or lightly spray it with non-stick cooking spray.

      Mix the Wet Ingredients:

In a large mixing bowl, whisk together the Greek yogurt, egg, granulated sugar, melted butter, and 1 teaspoon of vanilla extract until smooth and well combined.

          Combine Dry Ingredients:

In a separate bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon (if using).

              Combine Wet and Dry:

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

                  Fill the Donut Pan:

Transfer the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

                      Bake:

Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when touched and are golden around the edges. Let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

                          Prepare the Glaze:

In a small bowl, whisk together the powdered sugar, milk, and 1/2 teaspoon of vanilla extract until smooth. Adjust the consistency by adding more milk if necessary.

                              Glaze the Donuts:

Once the donuts have cooled, dip the tops into the glaze or drizzle it over them using a spoon. Add sprinkles if you like.

                                  Enjoy:

Allow the glaze to set for a few minutes before serving. Enjoy your melt-in-mouth Greek yogurt donuts with a cup of coffee or tea!
