Mediterranean Lamb Burgers with Tzatziki

Ingredients
  

For the Lamb Burgers:

1 lb ground lamb

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp dried oregano

1/2 tsp paprika

1/4 tsp cayenne pepper (optional for heat)

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh parsley, chopped

1 tbsp olive oil

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp lemon juice

Salt and pepper to taste

To Serve:

Pita bread or burger buns

Sliced tomatoes

Sliced red onion

Lettuce or arugula

Instructions
 

Prepare the Tzatziki Sauce:

    - In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Mix well, then cover and refrigerate to allow the flavors to meld while you prepare the burgers.

      Make the Lamb Burger Mixture:

        - In a large bowl, add the ground lamb, red onion, minced garlic, cumin, coriander, oregano, paprika, cayenne pepper (if using), salt, black pepper, and chopped parsley.

          - Use your hands to gently mix the ingredients until just combined. Avoid over-mixing, as this can make the burgers tough.

            Form the Patties:

              - Divide the lamb mixture into four equal portions and shape them into patties about 3/4 inch thick. Use a thumb to press a small indentation in the center of each patty; this helps them cook evenly.

                Cook the Burgers:

                  - Heat olive oil in a large skillet or grill over medium-high heat. Once hot, add the lamb patties.

                    - Cook for 4-5 minutes on each side for medium-rare doneness, or until they reach your desired level of doneness. If you have a meat thermometer, aim for an internal temperature of 145°F (63°C) for medium-rare.

                      Prepare to Serve:

                        - While the burgers are cooking, slice your pita bread or burger buns, and set out the sliced tomatoes, red onion, and greens.

                          Assemble the Burgers:

                            - Spread a solid layer of tzatziki on the bottom half of the pita or bun. Place a lamb burger on top, followed by slices of tomato, red onion, and lettuce or arugula. Top with more tzatziki if desired, then close with the top half of the pita or bun.

                              Serve:

                                - Serve immediately while hot, with extra tzatziki on the side for dipping. Enjoy the fresh Mediterranean flavors!
