Ingredients
  

1 cup couscous

1 ½ cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

½ red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

¼ teaspoon garlic powder (optional)

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the broth. Fluff with a fork and let it cool.

    Prepare the Vegetables: While the couscous cools, prepare your vegetables. Dice the cucumber, bell pepper, and red onion, and halve the cherry tomatoes.

      Combine Ingredients: In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, pepper, and garlic powder (if using) until well combined.

          Dress the Salad: Pour the dressing over the couscous mixture and toss gently to combine everything evenly.

            Add Fresh Herbs: Fold in the chopped parsley for a fresh herby flavor, reserving a little for garnish.
