1 pound of salmon fillet, skin removed and cut into 1-inch cubes

1/4 cup pure maple syrup

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes before using)

Fresh basil or cilantro for garnish

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, soy sauce, Dijon mustard, minced garlic, lemon juice, black pepper, and red pepper flakes (if using). This mixture will act as both marinade and glaze for the salmon.

    Marinate the Salmon: Place the cubed salmon in a large resealable plastic bag or shallow dish. Pour the marinade over the salmon, ensuring all pieces are covered. Seal the bag or cover the dish with plastic wrap and refrigerate for 30 minutes to 1 hour, allowing the flavors to infuse.
