Maple Glazed Pecan Salmon

4 salmon fillets (6 oz each)

1/2 cup pure maple syrup

1/3 cup pecans, finely chopped

2 tablespoons Dijon mustard

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon fresh lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease with cooking spray.

    Prepare the Glaze: In a medium bowl, whisk together the maple syrup, Dijon mustard, soy sauce, olive oil, minced garlic, lemon juice, and a pinch of salt and pepper until well combined.

      Coat the Salmon: Place the salmon fillets on the prepared baking sheet. Brush the maple glaze generously over each fillet, making sure to cover them well. Reserve a little bit of the glaze for later.

        Add the Pecans: Sprinkle the finely chopped pecans evenly over the top of the salmon fillets, pressing gently to ensure they adhere to the glaze.

          Bake the Salmon: Bake the salmon in the preheated oven for about 15-20 minutes, depending on the thickness of your fillets. The salmon should be flaky and cooked through, and the pecans should be lightly toasted.
