1 lb (450g) carrots, peeled and sliced into sticks

1 lb (450g) parsnips, peeled and sliced into sticks

3 tablespoons maple syrup

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon apple cider vinegar

1/4 cup unsalted butter, cubed

Chopped fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 425°F (220°C). This will ensure a nice caramelization on your vegetables.

    Prepare Vegetables: In a large bowl, combine the sliced carrots and parsnips.

      Make the Glaze: In a separate bowl, whisk together the maple syrup, olive oil, sea salt, black pepper, thyme, and apple cider vinegar until well combined.

        Combine: Pour the glaze over the carrots and parsnips. Toss the vegetables until they are evenly coated in the mixture.
