1 lb Brussels sprouts, trimmed and halved

2 medium apples (preferably Honeycrisp or Fuji), cored and sliced

1/4 cup pure maple syrup

2 tablespoons olive oil

1 teaspoon Dijon mustard

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Salt and pepper to taste

1/2 cup pecans, chopped (optional)

Fresh thyme for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Maple Glaze: In a small bowl, whisk together the maple syrup, olive oil, Dijon mustard, cinnamon, nutmeg, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the halved Brussels sprouts and sliced apples. Pour the maple glaze over the mixture and toss until everything is evenly coated.

        Spread on Baking Sheet: Spread the Brussels sprouts and apple mixture evenly on a large baking sheet lined with parchment paper. Make sure the sprouts are cut-side down for optimal caramelization.

          Roast: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized, and the apples are slightly soft.

            Add Pecans: If using, sprinkle the chopped pecans over the Brussels sprouts and apples during the last 5 minutes of roasting for added crunch.

              Serve: Remove from the oven and let cool for a few minutes. Transfer to a serving dish, garnish with fresh thyme if desired, and drizzle with any remaining glaze from the baking sheet.
