Ingredients

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

2 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Lemon wedges for serving (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

Prepare Cauliflower: In a large mixing bowl, add the cauliflower florets.

Make the Glaze: In a separate small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, smoked paprika, salt, and pepper until well combined.

Coat the Cauliflower: Pour the maple Dijon glaze over the cauliflower florets. Toss them gently until all the florets are evenly coated with the mixture.

Spread on Baking Sheet: Transfer the coated cauliflower onto a baking sheet lined with parchment paper, spreading them out in a single layer to ensure even roasting.

Roasting: Roast the cauliflower in the preheated oven for 25-30 minutes, flipping them halfway through. The cauliflower should be golden brown and caramelized at the edges once done.

Garnish and Serve: Remove the roasted cauliflower from the oven and let it cool for a minute. Garnish with freshly chopped parsley if desired. Serve with lemon wedges on the side for an extra burst of flavor.
