1 lb (450g) medium-sized carrots, peeled and cut into sticks

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Fresh thyme leaves (for garnish, optional)

Lemon wedges (for serving, optional)

Preheat the oven: Begin by preheating your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper for easy cleanup.

    Prepare the carrots: In a large mixing bowl, combine the peeled and cut carrots. Make sure all sticks are similar in size for even cooking.

      Make the dressing: In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and black pepper until fully combined.

        Toss the carrots: Pour the maple Dijon dressing over the carrots. Toss well to ensure that each carrot stick is evenly coated with the delicious mixture.
