Ingredients

4 bone-in pork chops (about 1 inch thick)

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges (for serving, optional)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, minced garlic, olive oil, fresh rosemary, salt, and black pepper until well blended.

Marinate the Pork Chops: Place the pork chops in a resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Grill: When ready to cook, preheat your grill to medium-high heat (about 400°F / 200°C). If using a charcoal grill, ensure the coals are evenly distributed for consistent cooking.

Grill the Pork Chops: Remove the pork chops from the marinade, allowing excess marinade to drip off. Discard the marinade (or reserve some for basting if desired). Place the pork chops on the grill and cook for about 5-7 minutes on one side.

Flip and Finish: Turn the pork chops over and grill for another 5-7 minutes or until they reach an internal temperature of 145°F (63°C) for medium doneness. If basting, brush a little reserved marinade on the chops during the last few minutes of grilling.

Rest the Chops: Once cooked, remove the pork chops from the grill and let them rest for about 5 minutes to allow the juices to redistribute.

Serve: Serve the grilled pork chops warm with lemon wedges on the side for a zesty kick, and enjoy alongside your favorite sides such as grilled vegetables or mashed potatoes.
