Ingredients

4 boneless, skinless chicken breasts

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

1 pound Brussels sprouts, trimmed and halved

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Instructions

Prepare the Marinade: In a bowl, whisk together the maple syrup, Dijon mustard, olive oil, apple cider vinegar, garlic powder, dried thyme, salt, and pepper. Reserve about 2 tablespoons of the marinade for later use.

Marinate the Chicken: Place the chicken breasts in a shallow dish or a resealable bag. Pour the marinade over them, ensuring they are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Preheat the Oven: About 10 minutes before you're ready to cook, preheat your oven to 400°F (200°C).

Prepare the Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and red pepper flakes (if using). Spread them in a single layer on a baking sheet.

Bake the Brussels Sprouts: Place the Brussels sprouts in the preheated oven and roast for about 20-25 minutes, or until golden brown and crispy, stirring halfway through for even cooking.

Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Sear the chicken breasts in the skillet for 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Glaze the Chicken: During the last few minutes of cooking, brush the reserved marinade over the chicken and let it caramelize slightly.

Serve: Once both the chicken and Brussels sprouts are done, serve the chicken hot, drizzled with any remaining glaze, alongside a generous portion of crispy Brussels sprouts. Garnish with fresh parsley for a pop of color.

Enjoy: This dish pairs beautifully with quinoa or wild rice for a complete meal!
