Mango Pineapple Salsa Chicken

For the Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

For the Mango Pineapple Salsa:

1 ripe mango, diced

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (optional, for spice)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Prepare the Chicken:

    - In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken breasts to coat them evenly.

      Cook the Chicken:

        - Heat a grill or grill pan over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from grill and let rest for a few minutes.
