Ingredients

1 ripe mango, diced

1 can (15 oz) black beans, drained and rinsed

1 small red onion, finely chopped

1 bell pepper (red or yellow), diced

1 jalapeño, seeded and minced (adjust to your spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper to taste

Tortilla chips (for serving)

Instructions

Prepare the Mango: Start by peeling the ripe mango and cutting it into small, even cubes. Set aside in a large mixing bowl.

Combine the Beans: Add the rinsed black beans to the bowl with the diced mango. Ensure they are well-drained to avoid excess moisture.

Add Fresh Vegetables: To the bowl, add the finely chopped red onion, diced bell pepper, and minced jalapeño. Mix gently to combine without mashing the beans.

Season: Pour in the fresh lime juice and sprinkle the ground cumin over the mixture. Season with salt and pepper to taste. Stir everything together until it’s well mixed.

Add Cilantro: Gently fold in the chopped cilantro, brightening up the salsa with fresh flavors.

Chill and Serve: For optimal flavor, let the salsa chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully. Serve with crispy tortilla chips for dipping.
