2 ripe mangoes, peeled and diced

1 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

Pinch of salt

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Mango: In a blender, add the diced mangoes and blend until smooth. If you prefer some texture, reserve a few pieces of mango to stir in later.

    Mix Coconut Base: In a separate bowl or container, combine the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix well until fully combined and creamy.

      Layer the Mixtures: In popsicle molds, layer the mango puree and coconut mixture. Start with a layer of mango, followed by a layer of coconut, and continue until the molds are filled, leaving a little space at the top for expansion.

        Add Fresh Pieces (Optional): If you reserved extra mango pieces, insert them into the molds for added texture and flavor.

          Insert Sticks & Freeze: Carefully insert wooden popsicle sticks into each mold. Place the molds in the freezer and freeze for at least 4-6 hours, or until fully solid.

            Unmold & Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull from the molds and serve immediately.

              Garnish (Optional): If desired, garnish with fresh mint leaves for a pop of color and refreshing aroma.
