Low-Carb Chicken Lettuce Wraps

Ingredients
  

1 lb ground chicken

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup mushrooms, finely chopped

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon fish sauce (optional)

1 tablespoon rice vinegar

1 tablespoon sriracha (adjust to taste)

1 teaspoon ginger, grated

1 tablespoon sesame oil

Salt and pepper to taste

1 head of butter lettuce or romaine lettuce, leaves separated

Sliced green onions and sesame seeds for garnish

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add minced garlic and ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.

      Increase the heat to medium-high and add the ground chicken. Cook, breaking it apart with a wooden spoon until browned and cooked through, around 5-7 minutes.

        Stir in diced red bell pepper and chopped mushrooms, sautéing until the vegetables are softened, about 3-5 minutes.

          In a small bowl, whisk together soy sauce, fish sauce (if using), rice vinegar, and sriracha. Pour the sauce mixture over the chicken and vegetables, stirring to combine. Let it cook for another 2-3 minutes so the flavors meld.

            Drizzle sesame oil into the mixture and season with salt and pepper to taste. Remove from heat.

              To assemble, scoop a generous spoonful of the chicken mixture onto a lettuce leaf, fold it like a wrap, and garnish with sliced green onions and a sprinkle of sesame seeds.

                Serve immediately and enjoy!
