2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup cooked and crumbled turkey or beef (optional)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese (or dairy-free alternative)

1/2 cup diced tomatoes

1/4 cup sliced jalapeños (pickled or fresh)

1/4 cup chopped green onions

1/2 cup sour cream or Greek yogurt (or dairy-free alternative)

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into even fry-shaped pieces, about 1/4 inch thick.

      Season the Fries: In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper until evenly coated.

        Bake the Fries: Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are crispy and slightly browned.

          Layer Toppings: Once the sweet potato fries are cooked, remove them from the oven. Top them with crumbled turkey or beef (if using), black beans, and shredded cheddar cheese.

            Melt the Cheese: Return the loaded fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Add Fresh Toppings: Carefully remove the nacho fries from the oven. Top with diced tomatoes, sliced jalapeños, chopped green onions, and a drizzle of sour cream or Greek yogurt.
