2 cups cooked white or brown rice

1 pound boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned, drained)

1 cup shredded cheddar cheese

1 avocado, diced

1 cup salsa

½ cup sour cream or Greek yogurt

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken:

    - In a large bowl, combine the diced chicken thighs with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the chicken is well-coated with the spice mixture.

      Cook the Chicken:

        - Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken. Sauté for about 6-8 minutes or until the chicken is cooked through and no longer pink, stirring occasionally. Remove from heat and set aside.

          Layer the Bowls:

            - In four bowls, start by adding a base of cooked rice (about ½ cup per bowl).

              - Top the rice with equal portions of black beans, corn, and diced tomatoes.

                Add the Chicken:

                  - Divide the sautéed chicken evenly among the bowls, placing it on top of the veggies.

                    Cheese It Up:

                      - Sprinkle about ¼ cup of shredded cheddar cheese over each chicken portion. Allow the heat from the chicken and veggies to slightly melt the cheese.

                        Garnish:
