Ingredients

1 large head of cauliflower, cut into florets

1 cup shredded cheddar cheese, plus more for topping

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 cup milk

1/2 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup cooked and crumbled bacon (or turkey bacon)

1/4 cup chopped green onions (for garnish)

1/4 cup grated Parmesan cheese (for topping)

Optional: a handful of chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter.

Prepare the Cauliflower: Steam or boil the cauliflower florets until they are tender but still firm, about 5-7 minutes. Drain well and set aside to cool slightly.

Blend the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, and milk. Mix until smooth and creamy. Stir in the shredded cheddar cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until everything is well combined.

Combine Ingredients: Gently fold the cooked cauliflower and crumbled bacon into the cheese mixture until all the florets are well coated.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Spread it out evenly, and sprinkle additional cheddar cheese and Parmesan cheese over the top.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Top with chopped green onions and, if desired, a sprinkle of fresh parsley for added color and flavor.

Enjoy: Serve warm as a decadent side dish or a main course option for a comforting meal.
