Ingredients

8 large eggs

2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon Dijon mustard

1 pound of bacon, cooked and crumbled

2 cups frozen hash browns, thawed

1 cup shredded sharp cheddar cheese

1/2 cup chopped green onions

1/2 cup diced bell peppers (red or green)

1/2 cup diced tomatoes (optional)

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet, let it cool, then crumble it into bite-sized pieces. Reserve some bacon drippings for later.

Mix the Eggs: In a mixing bowl, combine the eggs, milk, salt, black pepper, garlic powder, onion powder, and Dijon mustard. Whisk until the mixture is creamy and well-combined.

Layer the Casserole: In a greased 9x13 inch baking dish, evenly spread the thawed hash browns as the base. Drizzle a bit of reserved bacon drippings over the hash browns for added flavor.

Add Toppings: Layer the cooked and crumbled bacon over the hash browns. Sprinkle the dish with chopped green onions, diced bell peppers, and diced tomatoes (if using). Then, pour the egg mixture evenly over the entire casserole.

Cheese It Up: Top the casserole with shredded sharp cheddar cheese, spreading it evenly across the top.

Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the eggs are set and the cheese is bubbly and golden.

Cool and Serve: Once done, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with fresh parsley if desired, then slice into squares and serve warm.
