1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Juice and zest of 1 lemon

4 large whole-grain wraps or tortillas

1 cup fresh spinach or mixed greens

½ cup diced cucumber

½ cup sliced cherry tomatoes

¼ cup crumbled feta cheese (optional)

Hummus or tzatziki, for spreading

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: Spread the drained chickpeas on a clean kitchen towel and pat dry. This helps with crispiness.

      Season Chickpeas: In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, lemon juice, and lemon zest. Add the chickpeas and toss until they are evenly coated.

        Roast Chickpeas: Line a baking sheet with parchment paper and spread the seasoned chickpeas in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, stirring halfway through for even cooking.
