Ingredients

1 lb (450g) chicken tenders

2 tablespoons olive oil

Zest and juice of 2 large lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

1 tablespoon fresh thyme, chopped (or 1 tsp dried)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon honey (optional, for a touch of sweetness)

Lemon wedges and fresh herbs for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, pepper, and honey (if using). Whisk the mixture until well combined.

Marinate the Chicken: Place the chicken tenders in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes to 2 hours (or overnight for best flavor).

Preheat the Grill: Preheat your grill to medium-high heat, about 400°F (200°C).

Grill the Chicken: Remove the chicken tenders from the marinade and let any excess marinade drip off (do not discard the marinade). Place the tenders directly on the grill. Grill for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/75°C).

Sauce It Up (Optional): While the chicken is grilling, you can simmer the reserved marinade in a small saucepan over medium heat until it thickens slightly. This can be used as a sauce drizzle on the chicken after grilling.

Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then serve the grilled chicken tenders garnished with lemon wedges and fresh herbs, either as a main dish or sliced for salads or wraps.
