8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Freshly grated Parmesan cheese (for serving)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

      Add the Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes until the shrimp turn pink and opaque. Flip them halfway through cooking for even results. Season with salt and black pepper to taste.

        Combine Ingredients: Add the cherry tomatoes, lemon zest, and lemon juice to the skillet. Stir to combine and let cook for another 2 minutes until the tomatoes soften slightly.

          Mix with Pasta: Add the cooked pasta directly to the skillet with the shrimp and tomatoes. Pour in a splash of the reserved pasta water (about 1/4 cup) and toss everything together until well combined. If it's too dry, gradually add more pasta water until desired consistency is reached.

            Finish and Serve: Remove from heat and stir in the chopped parsley. Adjust seasoning with more salt, pepper, or lemon juice as needed. Serve hot, topped with freshly grated Parmesan cheese.
