Lemon Garlic Shrimp and Zucchini Noodles

Ingredients
  

1 lb large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1 lemon (juiced and zested)

3 tablespoons olive oil, divided

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Optional: Grated Parmesan cheese for serving

Instructions
 

Prepare the Zucchini Noodles:

    - Using a spiralizer, create zucchini noodles and set aside. Sprinkle with a little salt to draw out moisture and let them rest in a colander.

      Cook the Shrimp:

        - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

          - Once the oil is hot, add the shrimp and season with salt, pepper, and half of the red pepper flakes.

            - Sauté the shrimp for about 2-3 minutes on each side or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

              Make the Lemon Garlic Sauce:

                - In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil.

                  - Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

                    - Pour in the lemon juice and zest, stirring to combine and lifting any brown bits from the bottom of the pan.

                      Combine Ingredients:

                        - Add the zucchini noodles to the skillet and toss them in the garlic-lemon sauce for about 2-3 minutes until just tender, but still al dente.

                          - Return the cooked shrimp to the skillet and mix everything together gently. Adjust seasoning with salt and pepper if needed.

                            Serve:

                              - Plate the lemon garlic shrimp and zucchini noodles, sprinkling fresh parsley and the remaining red pepper flakes on top for an extra kick.

                                - If desired, add grated Parmesan cheese for extra flavor.
