Lemon Garlic Shrimp and Asparagus Rice Bowl

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

1 cup jasmine rice

2 cups vegetable or chicken broth

4 cloves garlic, minced

1 medium lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Rice: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the jasmine rice, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed. Once done, remove from heat and fluff with a fork.

    Cook the Asparagus: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the trimmed and cut asparagus and sauté for about 3-4 minutes until tender-crisp. Season with salt and pepper. Remove asparagus from the skillet and set aside.

      Sauté the Shrimp: In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, stirring until fragrant (about 30 seconds). Add the shrimp, season with salt and pepper, and cook for 2-3 minutes, stirring occasionally, until they turn pink.

        Add Flavor: Pour in the lemon juice and zest over the shrimp, mixing well to incorporate flavors. Cook for an additional minute until everything is evenly coated.

          Combine: Return the sautéed asparagus to the skillet and mix everything together gently to combine and heat through.

            Make the Bowl: To serve, place a generous scoop of jasmine rice in each bowl. Top with the lemon garlic shrimp and asparagus mixture.

              Garnish: Sprinkle with fresh chopped parsley and serve with lemon wedges on the side for an extra zing.
