1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and freshly ground pepper, to taste

1 cup cooked quinoa or rice (for serving)

Fresh parsley or cilantro, chopped, for garnish

Lemon wedges, for serving

Instructions
 

Prepare the Ingredients: Rinse the shrimp under cold water and pat them dry with paper towels. Trim the asparagus and set it aside. Cook quinoa or rice according to package instructions if you haven't done so.

    Marinate the Shrimp: In a bowl, combine the shrimp, 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Toss until the shrimp are well-coated. Allow to marinate for about 15 minutes while you prepare the asparagus.

      Sauté the Asparagus: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the asparagus and sauté for about 3-4 minutes, or until they are bright green and tender-crisp. Remove the asparagus from the skillet and set aside.
