Ingredients

1 pound chicken tenderloins

1 cup buttermilk

2 tablespoons lemon juice

1 tablespoon lemon zest

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Cooking oil (for frying)

Instructions

Marinate the Chicken: In a large bowl, whisk together buttermilk, lemon juice, lemon zest, minced garlic, paprika, oregano, salt, and pepper. Add the chicken tenderloins, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

Prepare the Breading: In a shallow dish, mix together the flour, grated Parmesan, Italian seasoning, and red pepper flakes (if using). Ensure the mixture is thoroughly combined.

Bread the Chicken: Remove the marinated chicken from the fridge. Take each piece out of the marinade, allowing excess liquid to drip off. Dredge the chicken tenderloins in the Parmesan flour mixture, pressing down lightly to ensure the coating adheres well. Set aside on a plate.

Heat the Oil: In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat until shimmering. You can test if the oil is ready by dropping in a pinch of the flour mixture; it should sizzle.

Fry the Chicken: Carefully place the breaded chicken tenders in the hot oil in batches, ensuring not to overcrowd the skillet. Fry for 4-5 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure they reach 165°F (75°C) for safety.

Drain & Serve: Once cooked, transfer the tenders to a paper towel-lined plate to drain excess oil. Repeat with remaining chicken. Serve hot with a squeeze of fresh lemon juice and a sprinkle of extra Parmesan if desired.
