Lemon Garlic Grilled Shrimp

1 pound large shrimp, peeled and deveined

4 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Prepare the Marinade: In a medium bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, thyme, oregano, red pepper flakes, salt, and pepper until well combined.

    Marinate the Shrimp: Add the shrimp to the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes—up to 2 hours for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C). If using skewers, soak wooden skewers in water for at least 20 minutes to prevent burning.

        Skewer the Shrimp: If using skewers, thread the marinated shrimp onto the skewers, about 4-6 shrimp per skewer. If grilling directly, you can skip this step.

          Grill the Shrimp: Place the skewers or shrimp directly on the grill. Grill for about 2-3 minutes per side or until the shrimp turn pink and opaque. Be careful not to overcook them to maintain their tender texture.

            Serve: Remove the shrimp from the grill and transfer to a serving platter. Garnish with chopped parsley and serve with lemon wedges for extra zing.
