1 lb fresh salmon fillet (skinless)

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup finely chopped fresh dill

1/4 cup finely chopped green onions (scallions)

1 large egg

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil (for frying)

Prepare the Salmon: Start by poaching the salmon fillet. Place it in a saucepan with water and bring to a simmer. Cook for about 10-12 minutes or until the salmon is cooked through. Remove from the water, let it cool slightly, and then flake it into large pieces, discarding any skin and bones.

    Mix the Ingredients: In a large mixing bowl, combine the flaked salmon, breadcrumbs, fresh dill, chopped green onions, egg, mayonnaise, Dijon mustard, lemon zest, lemon juice, garlic powder, and onion powder. Season with salt and pepper to taste.

      Form the Patties: Using your hands, gently mix until all the ingredients are well incorporated. Form the mixture into patties, about 2-3 inches in diameter. You should yield around 6-8 patties, depending on your size preference.

        Chill the Patties: For best results, place the formed patties on a plate and refrigerate for at least 30 minutes. This helps them hold together during cooking.

          Cook the Patties: Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the salmon patties to the skillet. Cook for about 4-5 minutes on each side or until they are golden brown and crispy.
