Lemon Dill Chicken Skewers

Ingredients
  

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh lemon juice (about 2 lemons)

1 tablespoon lemon zest (from 1 lemon)

3 tablespoons olive oil

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (optional, for extra flavor)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine the lemon juice, lemon zest, olive oil, chopped dill, minced garlic, salt, pepper, and paprika. Mix well until all ingredients are combined.

    Add Chicken: Add the cubed chicken to the marinade, making sure each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat the Grill: When ready to cook, preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium heat and lightly brush with olive oil.

        Assemble the Skewers: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

          Grill the Chicken: Place the skewers on the grill or grill pan. Cook for about 10-12 minutes, turning every few minutes until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve the chicken skewers hot, garnished with additional fresh dill and lemon wedges on the side.
