Ingredients
  

4 (6 oz) salmon fillets

2 tablespoons olive oil

3 tablespoons unsalted butter, melted

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves

1 teaspoon dried parsley or 1 tablespoon fresh parsley, chopped

1 cup cherry tomatoes, halved

1 lemon, sliced into rounds

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Foil: Cut four pieces of aluminum foil, each about 12 inches long, and lay them out on a flat surface.

      Season the Salmon: In a small bowl, whisk together the melted butter, olive oil, lemon juice, lemon zest, minced garlic, thyme, parsley, salt, and pepper.

        Assemble the Packs: Place a salmon fillet in the center of each piece of foil. Drizzle each fillet generously with the lemon butter mixture. Arrange the halved cherry tomatoes around the salmon, and top with lemon slices.

          Seal the Packs: Fold the sides of the foil over the salmon and tomatoes, then fold the top and bottom edges to seal the pack tightly, creating a tent.

            Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

              Serve: Carefully open the foil packs (watch for steam!) and sprinkle with fresh parsley if desired. Serve directly in the foil or transfer to plates.
