Ingredients
  

1 cup rolled oats

1 cup almond milk (or any milk of your choice)

1/2 cup Greek yogurt (plain or vanilla)

1 tablespoon maple syrup (or honey)

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

1/2 cup fresh blueberries (plus extra for topping)

Pinch of salt

Optional toppings: sliced almonds, chia seeds, or coconut flakes

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats and a pinch of salt.

    In another bowl, whisk together the almond milk, Greek yogurt, maple syrup, lemon zest, lemon juice, and vanilla extract until smooth and well combined.

      Pour the wet mixture over the oats and stir until fully incorporated.

        Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the mixture.

          Divide the mixture into serving jars or containers. Seal the lids tightly.

            Place the jars in the refrigerator and let them chill overnight (or for at least 4 hours) to allow the oats to absorb the liquid and flavors.
