Ingredients

2 cups plain Greek yogurt

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

3/4 cup honey or agave syrup (adjust to taste)

1/2 cup fresh basil leaves, finely chopped

A pinch of salt

Optional: 1 tablespoon of vodka (to enhance creaminess and prevent ice crystal formation)

Instructions

Prepare Ingredients: Start by zesting and juicing the lemons. Set aside the lemon zest and juice. Finely chop the fresh basil leaves and set them aside as well.

Mix the Base: In a medium mixing bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey (or agave syrup), chopped basil, and a pinch of salt. You can also add vodka at this stage for a creamier texture, though it’s optional.

Blend Until Smooth: Use a whisk or an electric mixer to blend the mixture until it's smooth and creamy. Taste the mixture and adjust the sweetness by adding more honey or syrup if desired.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the yogurt mixture for at least 1 hour to let the flavors meld and to chill the mixture thoroughly.

Churn the Yogurt: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes) until it reaches a soft-serve consistency.

Freeze to Firm Up: Transfer the churned yogurt into an airtight container. Smooth the top and press a piece of parchment paper directly on the surface to prevent ice crystals. Freeze for at least 2-4 hours until firm.

Serve: When ready to serve, let the frozen yogurt sit at room temperature for a few minutes to soften slightly. Scoop into bowls and garnish with fresh basil leaves and lemon zest if desired.

Enjoy: Indulge in your refreshing Lemon Basil Frozen Yogurt as a delightful dessert or a sweet treat on a warm day!
